
Mix the flour. egg and milk together in a blender or large bowl to get a smooth batter. Add 1 teaspoon of oil to a non-stick frying pan. When it’s hot add 2 tablespoons of the batter. Cook for 2 minutes on each side or until both sides are lightly brown. Keep the pancakes warm in the oven while you cook the rest.
I have tried making pancakes completely with wholemeal flour but the husband prefers them with some white flour!
