
Mix the dates, almonds, carob powder and lime rind in the food processor until the mixture forms a stiff ball. Place the mixture in a bowl and add the lime juice to make a large ball. Divide the mixture into about 6 parts and roll each into a small ball. Roll each ball in chopped brazil nuts or ground almonds as you prefer. Keep in the fridge if not serving immediately.
These zesty sweet treats are a healthy alternative to chocolate and look fabulous when entertaining.
