
Grill the bacon until crispy. Meanwhile fry the garlic and onions in a little olive oil for 2 minutes. Add the lentils, herbs, vinegar and tomatoes to warm through. Serve the bacon on the bed of lentils.
Lentils are a good source of complex carbohydrates and fibre. They also provide many B vitamins and minerals such as iron, zinc and magnesium.
