
Spread the washed watercress on 2 plates. Cut the oranges into slices removing all the peel and pith. Arrange the orange and cheese slices on top of the watercress. Cut the bread into small pieces and fry with the olive oil until golden. Sprinkle the croutons over the salad and serve.
Watercress and other green leafy vegetables are a great source of iron, particularly important for most women.
