
Grate the carrots. Add the grated orange and lemon rind. Squeeze the orange and lemon and mix the juice with the extra virgin olive oil in a screw-top jar. Mix the dressing with the carrot salad and sprinkle in some raisins. You can also add toasted sliced almonds.
This salad has always been popular with my friends. It may take a little longer to make than a green salad but it can be made hours before serving. The betacarotene in carrots converts to vitamin A which is needed for good eyesight, and helps you see in the dark!
